Spicy Chicken Rigatoni: A Zero Waste Kitchen Approach

The Soul of Sustainable Cooking

Welcome to another recipe from our zero waste kitchen. Today’s dish turns a classic comfort food into a meal with a plan for every scrap. This Spicy Chicken Rigatoni balances rich flavors with mindful cooking practices, so you get something delicious while keeping food waste to a minimum.

Ingredients

For each ingredient, I’ve included zero waste tips to get the most out of it.

For the Pasta and Protein:

  • 2 boneless skinless chicken breasts, cut into thin strips (save trimmings for homemade stock)
  • 1 pound rigatoni noodles, cooked al dente (or use any pasta shape you have on hand)

For the Aromatic Base:

  • 1 tablespoon minced garlic (3-4 cloves) (plant sprouted garlic cloves in your kitchen garden)
  • 1 tablespoon crushed red pepper flakes (save seeds from fresh peppers to dry your own)
  • ½ teaspoon black pepper
  • ¼ teaspoon salt (a refillable grinder cuts down on packaging)
  • 3-4 tablespoons olive oil (the bottle can be reused for homemade infusions)

For the Creamy Sauce:

  • 2 cups heavy cream (buy in glass containers when possible)
  • 2 cups marinara sauce (make extra and freeze in glass jars for future meals)
  • ½ cup peas (fresh or frozen from seasonal harvest)
  • 2 tablespoons unsalted butter (if it comes in plain paper wrapping, the wrapper can be composted; foil-lined wrappers cannot)
  • Fresh grated parmesan cheese for garnish (buy whole wedges and grate as needed, save rinds for soup stock)

Mindful Preparation

  1. Prepare Your Space
    • Take a moment before cooking and set an intention to create minimal waste
    • Lay out glass containers for vegetable scraps (for stock) and any recyclables
    • Keep a compost container within reach
  2. Prepare Pasta
    • Cook rigatoni according to package directions in salted water
    • Reserve 1 cup pasta water before draining (useful for thinning the sauce if needed)
    • Drain and keep warm
    • Zero waste tip: Cook exactly the amount needed or plan to repurpose leftovers
  3. Cook Chicken
    • Heat olive oil in a large cast iron or stainless steel skillet over medium-high heat
    • Add garlic, red pepper flakes, and black pepper
    • Cook for 2-3 minutes until fragrant but not burnt
    • Add chicken strips and salt
    • Cook until the chicken is fully done, about 3-4 minutes
    • Food safety tip: The USDA Food Safety and Inspection Service recommends cooking chicken to a safe minimum internal temperature of 165°F, measured with a food thermometer. Checking the thickest strip keeps you from overcooking the rest.
  4. Create Sauce
    • Pour marinara sauce over the chicken
    • Add heavy cream and stir to combine
    • Simmer for 10 minutes, allowing the flavors to meld
    • Add butter and peas
    • Stir until the butter melts completely
    • Zero waste tip: Use a silicone spatula to get every bit of sauce out of its containers
  5. Combine and Serve
    • Mix the cooked pasta into the sauce, coating each piece evenly
    • If the sauce is too thick, add small amounts of reserved pasta water
    • Garnish with fresh parmesan cheese
    • Optional: Add extra red pepper flakes for those who prefer more heat
    • Serve in warmed bowls

Preservation & Storage

Store leftovers in glass containers in the refrigerator. According to USDA FSIS, leftovers keep 3 to 4 days in the refrigerator or 3 to 4 months in the freezer, and should be reheated to 165°F as measured with a food thermometer. The flavors often deepen overnight, which makes this dish a good fit for meal planning. Add a splash of water or cream when reheating to bring back the creaminess.

Zero Waste Kitchen Notes

  • Chicken Bones & Scraps: Save any trimmings in a freezer container to make homemade stock later. Keep them out of a backyard compost pile; the EPA notes meat and bones attract animals and do not fully break down in home piles.
  • Vegetable Scraps: Garlic skins and onion ends can go into your stock bag or compost. Our root-to-stem cooking guide has more ideas.
  • Cheese Rinds: Save parmesan rinds to add rich flavor to future soups and stews
  • Pasta Water: The starch helps a sauce cling to the pasta, so use what you reserved before pouring the rest out
  • Shopping Mindfully: Buy ingredients in bulk when possible and bring your own containers to cut packaging

Holistic Nourishment

This dish brings together pasta, protein, and a rich, creamy sauce for a filling meal. The garlic and red pepper add warmth and heat, while the sauce offers pure comfort. Eat slowly and with gratitude for food prepared with care.

Total Time: Approximately 30 minutes
